What if you aren’t a huge fan of whole onions? I love the flavor, just not the crunch of onions. I’m working on my relationship with onion 😂 but still struggle to get over the fact that it’s onions. Any substitutions?
My mother would arrange each potato slice in columns and rows and she would alternate with columns and rows of onion rings. This is back in the olden days like 1960s

What is your preferred plant milk? I've tried making the bechamel with unsweetened almond milk, but it didn't taste right. I then tried it with rice milk, which was ok, but I thought I could make it better. I'm just not sure which plant milk I should try next. My Mom makes hers with milk and cream. I want to perfect a version that I think she'll be able to love that leaves out the animal products.
I made it!!! Definitely good!! I added cheese throughout, spinach, and some vegan crumbles. It's a potato casserole haha. Also I had almond flour, still came out good.
This sauce is AMAZING!!!
I recommend mixing everything in a bowl vs mixing in the pan. I was losing potatoes. I'm a clutz. Enjoyyyy

Gonna be making this for Thanksgiving for my non-vegan family. Im sure it will be devoured.

I made this at home, this was amazing. The only changes I did was to bake it for less time and use chicken stock

Butter is not Vegan. Use a quality coconut oil instead of butter.
