    As a ethnic Chinese not from China but Singapore, I think this dish is more influenced from China from the plentiful Chili. May I suggest my own recipe

    Sliced or diced chicken breast, soak in orange juice in zip lock bag for 30mins. This makes the breast tender when cooked and is natural instead of chemical meat tender agent.

    Season and marinate- 2 tablespoon oyster sauce, 1 tablespoon soy sauce taste it yourself and adjust, no need sugar if you tender your meat with orange juice. Pour Chinese cooking wine 50ml per breast portion into the marinate, flatten 2 cloves of onions, 2 slice of ginger, and scallions into the marinate and then throw the chicken breast into container/Ziplock and let it sit for 2 hours. Anything more or overnight would be saltier so adjust accordingly if you want prepare overnight lighten the flavouring.

    Preheat cooking wok, cast iron skillet to high heat, pour cooking oil, stir fry diced garlic and ginger till fragrant, pour sesame oil 2 tablespoon and pour in your chicken breast without the sauce. Adjust to mid heat, stir fry for 6 mins maximum. At 5 min, pour in another 50 ml Chinese cooking wine and stir fry. 1-2 tablespoon corn starch or flour and your done. If you love chilli throw it in and stir fry during the last minute.

    This would taste a lot better trust me. Am from Singapore and daily I eat east meet west fusion dishes and traditional dishes so trust my taste it would probably cater better to western palette.

    Buy Chinese cooking wine if not substitute with beer 100ML. If u got Chinese cooking wine pour 50 ml is more then enough. Pour it and stir fry during high heat and when almost cooked.

    Ingredient list for 1 chicken breast

    – 2 clove garlic for marinate 2 clove garlic diced for stir fry before chicken breast enters the wok
    – 2 slice of ginger
    – 2 tablespoon oyster sauce
    – sesame oil
    – 1 tablespoon light soy sauce
    – 100ml Chinese cooking oil 50ml for marinate 50ml last minute before cooked (beer) alternative
    – scallions
    – chilli

    Enjoy. Adjust the flavouring and remember what i said to marinate for 2 hours if you marinate longer expect saltier depending on your personal palette adjust as is.

  4. Made this exactly the same but it tasted horrible, that's way too much soy sauce, also 4 tablspn of soy just made it super salty and black af. Didn't look like yours at all!
